Oyster House Brewing Company history dates back to the '90's when I had a dream of one day starting my own brewpub.
The vision was the result of a passion for home brewing great beer and the desire to serve people both beer and food. Years went by as I served beer and food at The Lobster Trap in Asheville, NC.
One day, I had a conversation with our Chef and GM, Tres Hundertmark. I told him I wanted to create a unique and delicious beer to sell exclusively in the restaurant. I wanted to brew the perfect Oyster Stout.
It seemed like a bizarre idea at the time, but with a little research found that it wasn't unheard of and actually was quite delicious.
I dug some old home brew parts out of my garage and built a new mash tun out of a cooler. After hours of reading and watching videos, I was home brewing again. This time I wasn't using Malt Extract kits. It was my first attempt at all-grain brewing and I was convinced I could be successful. The 1st couple of attempts were minor disasters but my beautiful wife Holly Ann was always supportive, and thankfully, likes great beer too.
A few tries later and the beer was starting to taste great. After 12 months of obsessive brewing I had made the perfect Oyster Stout. It was a combination of roasted barley and chocolate malts, with just a hint of some black patent malt and 5 pounds of those delicious oysters on the half shell.
With a delicious and very unique beer in hand, it was time to bring the beer to work and let everybody try it. If the staff and owner loved it, I knew I could make the dream of having my own brewpub come to life.
2009 marked the birth of the Oyster House Brewing Company brewpub in West Asheville. With thousands of pints sold, and thousands of happy customers, we are here to stay.
